Gluten-free Chocolate cake














One Bowl Gluten Free Chocolate Cake

  • 1 1/2 cups gluten free flour
  • 1/2 cup cocoa
  • 1 cup sugar
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 3/4 tsp guar gum or xanthan gum
  • 5 Tbs cooking oil
  • 1 Tbs vinegar
  • 1 tsp vanilla
  • 1 egg
  • 1 cup water

    Directions:
    1. Mix all dry ingredients in a bowl.
    2. Add all liquid and mix well.
    3. Bake in greased (oiled) and floured 9" square pan, at 350 degrees F, for 30-35 minutes or until toothpick inserted comes out clean.



Creamy Vanilla Frosting/Icing


  • 1/2 cup soy milk (or rice)
  • 1 Tbs cornstarch
  • 1/2 cup crisco or other All-vegetable shortening (spectrum) we used coconut butter
  • 1 cup powdered sugar
  • 1 1/2 tsp vanilla
  • 1/2 tsp salt
  • 1 1/2 cups powdered sugar

Directions:

1. Combine cold soy/rice milk and cornstarch in saucepan. Cook and stir over low heat until mixture thickens and bubbles. Cool.

2. Beat shortening and 1 cup powdered sugar until fluffy.

3. Beat in cooled cornstarch mixture, vanilla and salt.

4. Add remaining powdered sugar, beat until smooth.
